Chickpea Salad & Bacon Bits Vegan Appetizer
I created this yummy little appetizer on a whim when I was photographing my cashew bacon bits recipe. I grabbed some leftover chickpea salad out of the fridge, smeared it on some bagel chips, and then sprinkled the bacon bits on top.
I figured it would make for a good photography because of the contrast. What I didn't figure was how absolutely DELICIOUS it would taste.
This would be such a simple appetizer to make for holidays, viewing parties, game day, or whatever you are celebrating. It is als amazing as a fun snack.
The creaminess of the chickpea salad combined with the crunchiness of the chip and smokey bacon bits...HEAVEN.
You don't need to use bagel chips, that's just what I had on hand (and they were so good). You can use your favorite crackers instead. I have been loving Mary's Gone Crackers lately - especially the herb flavor. Super healthy and makes the tastebuds happy <--- the ideal combination, right?

Chickpea Salad + Bacon Bits Appetizer
Ingredients
- homemade chickpea salad
- crunchy bacon bits
- bagel chips or crackers
Instructions
- Smear chickpea salad onto bagel chips or crackers. Sprinkle bacon bits on top. Done!
