I don’t yet have a child in school (we are opting to homeschool our son for pre-k and possibly kindergarten) – but I know what it’s like rushing to get lunch ready the morning before work or the evening prior. The STRUGGLE.
I decided to compile a list of delicious vegan lunches to help you solve that time crunch problem! There are no “cook these lentils ahead of time so you can be ready for the week” type instructions. We don’t have time for that! These recipes can be prepped in 10 minutes or less – start to finish.
