    Whether you are working from home or have to rush out the door to head to your workplace in the morning, having an arsenal of quick lunches can change your whole day.

    I'm here to help you solve that time crunch problem! There are no "cook these lentils ahead of time so you can be ready for the week" type instructions. We don't have time for that! These easy vegan lunch ideas can be prepped in 20 minutes or less - start to finish.
