This homemade Roasted Red Pepper Salad Dressing is full of amazing flavor and is super easy to make. It's also vegan and gluten-free!
Roasted Red Pepper Salad Dressing (Vegan & GF)
Confession: I used to hate making my own salad dressing. It always seemed too complicated, and I simply preferred store bought. I preferred basically everything store bought back then, though. Once you start making things at home with quality ingredients your taste buds start to pick up on what I like to call that gross-artificial-kinda-like-plastic-store-bought-taste. Maybe all those preservatives.
Now, I love making my own salad dressing because I prefer the better quality taste. I also love experimenting with different flavors (like garlic hemp oil salad dressing) and of course this roasted red pepper salad dressing!
Roasted red peppers are a staple that I always have on hand to make hummus with, so when I saw a jar in my pantry in the midst of brainstorming a new salad dressing recipe, things just CLICKED. I thought it would taste amazing and I was so right (that feels good to say! ha!)
You certainly could roast your own red peppers to make this, as well! Here is a how-to.
The best part (besides the flavor) is that you just throw all of the ingredients into the blender and it's done. Just toss it with a salad, like Orzo Pasta Salad, and you're ready to enjoy or serve to your family friends.
You can also using this roasted red pepper dressing recipe as a delicious & unique marinade, to dip bread in, or even to drizzle onto a sandwich.
Roasted Red Pepper Salad Dressing
Ingredients
- 12 oz jar of roasted red peppers (keep the liquid too)*
- 1 tablespoon olive oil
- 1 tablespoon of lemon juice - about half a lemon's worth
- 2 cloves garlic
- ¼ teaspoon ground black pepper
- salt to taste
Instructions
- Blend all ingredients in a blender, including the liquid that comes in the jar of roasted red peppers, until relatively smooth.
- Add salt to taste if desired.
- Drizzle over a delicious salad (like Orzo Pasta Salad) and enjoy!
