Substituting parmesan, one of the most-used cheeses in Italian cuisine, is as simple as buying the vegan version from the supermarket, or making your own homemade parmesan from cashews. Instead of meats, I like to use tofu or various vegetables (for example, this list includes 3 different substitutes for chicken parmesan!)
