Buffalo Chickpea Salad Sandwich
This vegan sandwich recipe is spicy + filling + delicious! And oil-free.
- 1 can chickpeas
- 1/4 cup reserved chickpea juice from can
- 1-3 tbsp hot sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 stalk of celery chopped
Pulse all ingredients in a blender until well-incorporated and broken down, but not totally mushy. You still want some texture in there!
Mix in chopped celery.
Top with pickles, lettuce, tomatoes, etc.
