Press the tofu for at least 30 minutes. The best method is to use a tofu press, but you can also press tofu by putting the block of tofu between two dish towels and placing something heavy on top - like a cast iron pan or a pile of cookbooks.
While the tofu is being pressed, whisk together the tofu sauce ingredients (soy sauce, lime juice, oil, chili powder, garlic powder, cumin, and paprika.)
Prepare the bell peppers and onions by slicing & tossing them with the oil and seasonings (chili powder, garlic powder, cumin, and salt.)
Pre-heat the oven to 425°F degrees.
Line a baking sheet with parchment paper or a silicone baking mat.
Slice the tofu into about ½ to 1-inch sticks. Lay the tofu on half of the baking sheet and the peppers & onions on the other half. Brush the tofu with some of the sauce prepared earlier.
Bake for 25-30 minutes. Halfway through the baking time, toss the peppers and onions. Flip the tofu and brush with more sauce.
