    Baked Cucumber Chips Recipe

    Nutritious baked cucumber chips are sure to be a hit for both kids and adults! This recipe makes for an easy and healthy snack and the flavors are totally customizable.

    I love eating healthy, real food.

    I also love chips.

    It's a serious struggle.

    But recently I discovered the best of both worlds: Cucumber chips!

    There is nothing like a fresh cucumber from the farmer's market and I love coming up with delicious cucumber recipes. Right now, my favorite recipe for cucumbers is baked cucumber chips! This recipe is super simple, customizable, and pretty much guilt-free.

    These healthy chips are made right in the oven, unlike many other recipes that require a dehydrator.

    Homemade Basked Cucumber Chips Recipe

    First, take your cucumber and slice it up. Prime thickness is about an ⅛ of an inch. You want to make sure they'll "cook" evenly. Using a mandoline will help keep them uniform.

    Next, pat them dry with a towel and throw the raw cucumber slices into a bowl and mix in your seasoning of choice.

    There are so many different varieties of spices and seasonings for these cucumber chips. Here are some of my favorite:

    Onion and Garlic
    Powdered garlic and salt

    Salt and Vinegar Chips
    Salt and apple cider vinegar (I prefer Bragg's)

    Smoked Cucumber Chips
    Smoked paprika, salt, and garlic powder

    Lemon Pepper
    Freshly squeezed lemon juice and ground black pepper

    You could also try some dill pickle chips with dill and ACV...or herb chips with rosemary and thyme - get creative!

    Then, stick them in the oven on a parchment paper-lined baking sheet for 3-4 hours on 170 degrees - slow and low so the chips don't burn, but still come out dried and crispy. Cooking time will depend on how large your cucumbers are.

    SUPER IMPORTANT NOTE: If your oven temperature is off, this will cause your cucumber chips to either overcook or undercook. It's a good idea to get an oven thermometer if you suspect your temperature isn't correct.

    Ingredients
      

    • Cucumbers - 3 small ones or 1-2 large ones
    • Seasoning of choice:

    Option 1: Smokey Cucumber Chips

    • 1 teaspoon of smoked paprika
    • 1 teaspoon of garlic powder
    • Salt to Taste

    Option 2: Onion and Garlic

    • 1 teaspoon of onion powder
    • 1 teaspoon of garlic powder
    • Salt to taste

    Option 3: Salt and Vinegar

    • 1 teaspoon of apple cider vinegar
    • Salt to taste

    Option 4: Lemon and Pepper

    • 1 teaspoon of fresh lemon juice
    • ½ teaspoon of ground black pepper

    Instructions
     

    • Slice cucumbers thinly, about an ⅛ of an inch in thickness.
    • Pat cucumbers dry and add them to a bowl. Mix well with your seasoning of choice.
    • Line a baking sheet with parchment paper. Place the cucumbers onto the baking sheet, lying flat and separated.
    • Bake low and slow at 170 degrees Fahrenheit for 3-4 hours. Time will depend on how large your cucumbers are.
    • Remove the cucumbers from the oven once they are dried out and crispy.
    • Enjoy your healthy snack!

    Notes

      These are delicious! I made the onion and garlic ones. Even my husband really liked them! One small suggestion....could you give an exact measurement on the amount of salt to use? I realize some people like more or less salt, but in a recipe everything is really "to taste," it's just a starting point and people modify it. Not putting an amount of salt makes it particularly difficult for those of us who are not experienced cooks. Even more so in a recipe like this where you can't taste as you make it and add more. One more thing, how long do these keep for? Thanks!

      Should these be crunchy. Mine turned out a little chewy. I used the dehydrator function on my counter top oven. 170 degrees for 4 hours.

      I’m excited to see this recipe. My husband was just asking me if cucumbers could be cooked. We have a garden and the cucumbers didn’t do well last year, so I planted cucumbers in several places as an experiment. They all grew, now I have more than I can deal with. I almost have 2 cases of pickles now. I am scouring the internet to find out what I can do so I’m not wasting them. I will end up selling or giving some away, but I may use this recipe as my saving grace. We love chips and this would be a healthy alternative.

      Have you tested out sweet toppings, like cinnamon or something along that line? Just curious. Wanting to try these, the idea came to me about dehydration/ making chips out of pickles but was not sure how to execute it. Thanks for the recipe!

      This looks delicious.
      what is ACV ?
      You suggest dill and ACV as
      another seasoning option.
      But I have pinned
      this on Pinterest and wrote it down to try later.
      I do like cucumbers and I have never heard of
      Cucumber chips before.

          I am not one for abbreviations when
          I can write the whole word out and say
          what I mean, that way. That is just my
          preference .
          But I will use dill and salt on my
          cucumber chips.
