This blueberry hemp seed salad is packed with healthy ingredients, lots of texture, and drizzled with a delicious creamy garlicky tahini dressing. Vegan, nut-free, oil-free.
Blueberry Hemp Seed Salad with Creamy Tahini Dressing
I love a good salad. But a truly GOOD salad - a salad that isn't super boring to eat and has lots of texture and flavor. One of my all-time favorites is this vegan Caesar salad, but when I want something lighter I typically go for a basic salad with seeds or nuts and a simple dressing.
Hemp seeds can always be found in my fridge - they are an earthy, softer seed perfect to add into smoothies, on top of peanut butter toast, in yogurt, and of course, in salads.
Because of their health benefits, hemp seeds are easily one of my favorite seeds. Here's why:
- Hemp seeds are rich in both Omega 6 and Omega 3
- They are a great source of plant-based protein
- Hemp seeds are good for digestion, as they contain both soluble and insoluble fiber

But hemp seeds are not the only spectacular component in this salad! It also calls for fresh blueberries and a creamy tahini dressing.
The tahini dressing couldn't be any easier to make. You don't need a blender or anything fancier than a spoon or a whisk. No cashews or vegan mayo needed for this creamy dressing. Just tahini, lemon juice, garlic, salt and pepper, and water to thin it out to the consistency you like.
Tahini is another healthy fat that I try to incorporate into my diet! It's also rich in calcium, vitamin E, and many B vitamins.
Salad Meal Prep Tips
On the weekend, one of my goals is to get some things meal prepped. If that's just slicing up some veggies and fruit, great. But I try to prep at least 1 meal to eat when I don't have time to make something else. Salads are great for that!
For this hemp seed salad, simply put the greens, hemp seeds, blueberries and cucumbers in one container and the dressing in another. Is there anything more unappetizing than soggy salad?
Just note that the sliced cucumbers will not stay crisp for more than a couple of days. If you plan on eating it past day 2 or 3, store them in a separate container and cover the slices with water to keep them fresh.

Blueberry Hemp Seed Salad
Ingredients
- 2 cups salad greens*
- 1 small cucumber sliced
- ½ cup blueberries fresh
- 1-2 tablespoons hemp seeds
Creamy Tahini Dressing
- ¼ cup tahini
- 1 tablespoon lemon juice
- 1 large clove fresh garlic minced or crushed
- 6-8 tablespoon water
- salt and pepper to taste
Instructions
- Whisk together all of the dressing ingredients in a small bowl until smooth and creamy.
- Assemble your salad with the greens, blueberries, hemp seeds, and drizzle the dressing on top.
