Blueberry Hemp Seed Salad
This vegan blueberry hemp seed salad is packed with healthy superfoods, lots of texture, and drizzled with a delicious hemp oil salad dressing.
Salads get a totally bad rap. Many people think they are boring and lacking in interesting flavors.
And I get it. Some salads can be boring.
But I love, love, love a good salad. I repeat: “a good salad”. To me, a good salad has the following elements:
- Fresh greens,
- Super flavorful dressing (like this Garlic Hemp Oil Dressing),
- Something sweet (OR creamy),
- and LOTS of crunch and texture
Which is why this blueberry hemp seed salad is totally my jam. Err…my salad.
Easy Green Salad Recipe Loaded with Superfoods
I love arugula and spinach as a base of my salads. Arugula is a little spicy and crisp, while baby spinach is more muted and has a soft bite to it. Perfect combination. (Plus, you’re getting in the nutrients and health benefits of different types of greens.)
The garlic hemp oil dressing is a little earthy from the hemp oil, and has a bit of zing to it from the white wine vinegar. Plus, garlic…who doesn’t LOVE garlic in any and everything?
Whoever decided to put fruit in a salad was an absolute genius. I love sweetness the soft blueberries add to this salad.
And onto the texture and crunch (my favorite parts), we have hemp seeds, sunflower seeds, and cucumbers. Hemp seeds add a lovely earthy element. And while they have lots of texture, they aren’t quite as crunchy as the sunflower seeds are.
Speaking of sunflower seeds…these need to be in every salad ever. That should be law. So much crunch. So much deliciousness. I prefer roasted sunflower seeds – but to make this a raw vegan salad recipe, raw sunflower seeds can easily be used instead.
And then there are cucumbers. I try to pack these into any salad, sub, or sandwich I can (like on a chickpea salad sandwich!) So of course they deserve a spot here in this tasty blueberry hemp seed salad. I also think cucumbers pair really well with blueberries.

- Garlic Hemp Oil Dressing
- 2 cups of salad greens*
- 1 sliced cucumber
- 1/2 cup blueberries
- 2 tablespoons hemp seeds
- 2 tablespoons sunflower seeds
- Prepare the garlic hemp oil dressing.
- Toss together the greens, cucumber, blueberries, hemp seeds, and sunflower seeds.
- Drizzle on your dressing.
- Dig in! This salad can serve 2 as a side salad, or 1 serving as a meal!
