Step up your french fry game with these loaded vegan bacon cheese fries. Sounds indulgent, right? The bacon is made from cashews, the cheese sauce is made from squash, and the fries are baked without oil! I love this as a healthy lunch recipe.
Vegan Bacon Cheese Fries
Baked (or air fried) fries. Meets homemade vegan cheese sauce. Meets cashew bacon bits. Meets PURE HEAVEN IN YOUR MOUTH. Seriously, look at that platter of deliciousness.
Smothered fries are definitely one of my favorite meals. And this cheese sauce is usually present. Sometimes I dollop some salsa on them, too, or some refried beans. But if you're craving bacon cheese fries, this vegan version will totally hit the spot.
Unlike traditional bacon cheese fries that come from a vendor at the state fair, these ones are healthy and won't leave you feeling like crud after you devour them. The fries are baked on parchment paper with no oil. The cheese and bacon bits are also oil-free. WOOT.
If you're following the guidelines of Dr. McDougall's book The Starch Solution, this is totally compliant - and you can easily omit the salt if you want. And hey, if you're not, this is just a really tasty recipe that happens to be healthy...dare I say nutritious.
Meal Prep
This is a great meal to prep ahead. Pop the already-baked fries in the oven at 400 degrees for 10 minutes (or until they are warm and get their crunch back), warm up the cheese, and assemble! Recipe
Vegan Bacon Cheese Fries
Ingredients
- 3 russet potatoes
- salt to taste
- vegan cheese sauce
- vegan bacon bits
- optional garnish ideas: green onions, smoked paprika
Instructions
- Preheat oven to 450 degrees.
- Peel and slice potatoes into fries.
- Line a baking sheet with parchment. Spread fries out evenly.
- Bake for 30-40 minutes, flipping halfway, or until fries until golden brown and crunchy.
- While fries are baking, prep the cheese sauce and bacon bits.
- Put it all together! Eat them all! Or share - this recipe serves 3.
