From quick and easy dinners to labor-of-love meals for the weekend, I’ve got your back with these tried and true vegan dinner recipes!
Vegan Dinner Ideas to Try Tonight
Whether you need to throw together a really easy dinner on the fly or you’re ready to spend some time in the kitchen on a Sunday, there are tons of delicious options. Vegan food is NOT boring, promise. We aren’t eating grass over here. Veggies can be super exciting and tasty, just take a look for yourself.
Quick & Easy Vegan Dinners
Fried rice is a classic recipe in my house! If you use leftover rice (which you should!) this recipe will take about 30 minutes to make. You can even prep the veggies ahead of time.
This easy meal can be made in just minutes. Everything is cooked right in an Instant Pot. If you don’t have one, I highly recommend it! Especially if you’re busy. This Instant Pot curry is also really good.
Vegan Caesar Salad
Ready in 30 minutes, these vegan tacos are seriously tasty. This is one of the first purposefully-vegan recipes I made, and it’s one I keep coming back to!
This pasta dinner is super quick – it takes just 15 minutes to make! I love savory pumpkin recipes, and the creamy pumpkin sage sauce tossed into pasta is heavenly.
This bolognese is made with cauliflower and sunflower seeds – perhaps an odd combination, but trust me, it totally works! Serve over pasta or a baked potato.
I usually enjoy these chickpea wraps for lunch, but they are also a really great dinner idea! Perfect for those super busy nights when you really don’t have much time to be in the kitchen. This is a great recipe to meal prep.
Sweet Potato Shepherd’s Pie
I loooved shepherd’s pie as a kid! That version was made with beef, corn, mashed white potatoes, and loads of cheese on top. This sweet potato version takes a lighter, healthier approach.
Chickpeas, potatoes, peas, broccoli, and rice come together in one single pot to make this flavorful curry dish.
This chopped salad is quick to prepare but still filling. Not only does it have chickpeas, it’s also topped with incredible “bacon” bits made from cashews. So, so good.
Serve with a salad or with a sandwich, like a simple grilled cheese (I love Chao cheese!) or a chickpea salad sandwich.
Time-Worthy Dinner Recipes
These vegan recipes might take a little bit more time to make, but they are so worth it! Perfect for weekend dinners or special occasions. Of course, I have still made some of these recipes during the week!
I’m not sure what the best part of this recipe is – the fact that you don’t need to boil the pasta, or the incredible vegan ricotta and bechamel that are layered between the marinara and noodles.
Vegan pot roast made with a whole head of cauliflower is my personal favorite special occasion meal. The gravy alone is absolute perfection.
Italian Wedding Soup
This nutritious soup made with homemade chickpea meatballs is the perfect cozy Sunday dinner recipe.
This is a super fun dinner idea – because hello, PINEAPPLE BOWLS?! Chickpeas are a great chicken substitute in a lot of dishes, and teriyaki is no exception.
Is your mouth watering yet?! Swedish meatballs are the ultimate comfort food. The “meat” in this balls is made from lentils, mushrooms, and oats.
Say hello to the best soup I have shared on the blog so far (in my opinion!) It’s super flavorful, healthy, and so comforting! Tons of veggies, chickpeas, and of course, pasta. Or, if you prefer, you could make this with quinoa.
Beef Wellington, who?! This vegan recipe will make you forget about the other stuff. I love making this dish for super special occasions like holidays or family feasts.
Cauliflower and lentils make up the “meat” for these vegan sloppy joes! So delicious.
Creamy, delicious vegan alfredo sauce tossed with pasta and cajun-spiced broccoli – need I say more?! Alfredo just screams “Sunday dinner” to me, but this recipe can be whipped up pretty quickly.
Stuffed Acorn Squash
The flavorful combination in this dish is out of this world! This squash is stuffed with lentils, kale, and tempeh sage, and roasted pepitas.
These meatball subs are made with homemade chickpea meatballs. Top with some marinara sauce and vegan parm, and omg, flavor heaven. Sometimes I like to line the sub rolls with a slice of vegan provolone and it totally takes this dinner to the next level!
