Vegan food is NOT boring, promise. We aren’t eating grass over here. Veggies can be super exciting and tasty, just take a look for yourself.
Quick Weeknight Dinners
The following recipes are perfect for a rushed dinner after work or school, without sacrificing taste!
This easy meal can be made in just minutes. Everything is cooked right in an Instant Pot. If you don’t have one, I highly recommend it! Especially if you’re busy. This Instant Pot curry is also really good.
Ready in 30 minutes, these vegan tacos are seriously tasty. This is one of the first purposefully-vegan recipes I made, and it’s one I keep coming back to!
This bolognese is made with cauliflower and sunflower seeds – perhaps an odd combination, but trust me, it totally works! Serve over pasta or a baked potato.
Chickpeas, potatoes, peas, broccoli, and rice come together in one single pot to make this flavorful curry dish.
This chopped salad is quick to prepare but still filling. Not only does it have chickpeas, it’s also topped with incredible “bacon” bits made from cashews. So, so good.
Serve with a salad or with a sandwich, like a simple grilled cheese (I love Chao cheese!) or a chickpea salad sandwich.
Vegan Sunday Dinners
I call these Sunday dinners because they are meals that can be made when you have a bit more time to spend in the kitchen. Sundays in my house usually consist of doing laundry, planning for the week, and devouring really scrumptious food.
I’m not sure what the best part of this recipe is – the fact that you don’t need to boil the pasta, or the incredible vegan ricotta and bechamel that are layered between the marinara and noodles.
Vegan pot roast made with a whole head of cauliflower is my personal favorite special occasion meal. The gravy alone is absolute perfection.
This is a super fun dinner idea – because hello, PINEAPPLE BOWLS?! Chickpeas are a great chicken substitute in a lot of dishes, and teriyaki is no exception.

These meatball subs are made with homemade chickpea meatballs. Top with some marinara sauce and vegan parm, and omg, flavor heaven. Sometimes I like to line the sub rolls with a slice of vegan provolone and it totally takes this dinner to the next level!
